Recipe for Kolaczki (ko-lah-ch-ky) - a famous Polish cookie/pastry

MY OWN, TWEAKED, RECIPE FOR CREAM CHEESE KOLACZKI



 
 A famous polish cookie / pastry that's very easy to make
It is pronounced "ko-lah-ch-ky." And Mmmm, they are GOOD (pronounced guud)

Ingredients

1 - 8oz softened cream cheese
3 sticks softened butter (12 oz total)
3 cups flour
Fruit Preserves of your choice (2 small jars) (I made strawberry and apricot, using Smucker's fruit preserves)
Powdered Sugar


Prep 

  1. Mix softened cream cheese and butter until fluffy, then slowly add in flour (1 cup at time)
  2. Refrigerate dough for 1-2 hours
  3. Heat oven to 350 degrees
  4. Roll out dough about 1/4 inch thick and dust flour or powdered sugar underneath (I used powdered sugar) too keep from sticking
  5. Cut dough into 2 inch squares and place 1/2 to 1 teaspoon of fruit preserves onto each square
  6.  Fold over corners of dough like a blanket (into diamond shape). (I wet my finger in a bowl of water and rub onto the dough to make the "blanket" close. I found that when you don't, some of the dough comes undone in the oven because it expands)
  7. Bake for 15 mins in 350F (or until corners start to brown), then dust with powdered sugar
